FUDGEY CHOC MACADAMIA BROWNIES

Ingredients: 

1/2 cup cacao powder 

1/2 cup spelt flour 

1/2 cup cassava flour 

1/2 cup melted butter 

1 egg 

1/4 cup raw honey 

1/3 cup choc chips 

1/4 cup macadamias roughly chopped 

1 tsp baking powder 

2 tbsp gelatin, mixed into 1/2 cup water to thicken 

pinch of salt 

  1. Preheat the oven to 170 degrees and line a baking tray with baking paper.

  2. Melt the butter in the microwave or over a low heat, and set aside to cool slightly.

  3. Add the gelatin to the water in a small bowl so that it can thicken.

  4. Take out a large bowl and mix the cacao, spelt flour, cassava flour, baking powder and macadamias together gently.

  5. In a separate bowl, whisk the egg, then add in the honey and butter, stirring to combine.

  6. Then to the wet mixture, add the bloomed gelatin and stir.

  7. Pour the wet mixture into the dry and mix until there are no dry lumps of flour.

  8. Stir through the chocolate chips and pour the batter into the baking dish.

  9. Transfer to the preheated oven for roughly 30 minutes, or until firm within.
