CITRUS ALMOND CAKES

Ingredients: 

1 cup almond meal 

3/4 cup cassava flour 

1/2 cup collagen 

1 tsp baking powder 

1/2 tsp bi-carb 

1/2 cup melted butter 

1/4 cup milk 

1/2 cup honey 

2 eggs 

1/2 cup lime juice 

zest of 1 lime 

  1. To begin, preheat the oven to 170 degrees.

  2. Line a muffin tray with patty papers and set aside.

  3. Take out a large bowl and add in the almond meal, cassava flour, collagen, baking powder and bi-carb.

  4. Stir gently to combine. In a separate bowl, crack in the eggs and whisk them well.

  5. Pour in the milk, melted butter, honey and lime juice.

  6. Grate the zest over the top and stir well.

  7. Mix the wet ingredients into the dry ingredients until smooth.

  8. Spoon the mixture into the muffin tray and bake in the oven for roughly 12-15 minutes.
