CHICKEN SAUSAGE ROLLS

Ingredients: 

500g organic chicken mince

125g organic chicken livers - finely diced

3 garlic cloves

1 tbsp melted ghee

1 tbsp rosemary

2 tbsp miso paste

1 tsp cracked pepper

2 sheets of spelt Careme puff pastry

Chilli flakes

Salt to taste

Sesame seeds to garnish

  1. To begin, preheat your oven to 170 degrees and line a large baking tray with baking paper.

  2. Finely dice the chicken mince, livers, garlic and rosemary, and add to a large bowl.

  3. Then add the miso paste, pepper, chilli and salt, mixing well to combine all ingredients.

  4. Having allowed the pastry to soften, position the pastry horizontally and spoon 1/2 of the mixture onto the pastry in a straight line vertically.

  5. Roll the pastry firmly and secure with your hands/fingers if necessary.

  6. With a pastry brush, brush the melted ghee over the top of the pastry and sprinkle with sesame seeds.

  7. Gently cut into 4 even pieces and place onto the baking tray.

  8. Repeat this process using another sheet of pastry and the remaining of the chicken mixture.

  9. Once complete, place the baking tray into the oven and allow the rolls to cook for roughly 30 minutes or until golden brown on top and cooked inside.
