BANANA AND MACA BREAD

Ingredients:

3 large ripe and spotty bananas

1 ¾ cup spelt flour

2 tsp baking powder

½ tsp bicarb

1 tsp cinnamon

1 tbsp maca powder

2 eggs

½ cup coconut milk

½ cup olive oil

Pinch of salt

  1. Preheat the oven to 170 degrees and line a bread dish with baking paper.

  2. Take out a large bowl and combine the milk, whisked eggs and olive oil in a large bowl and stir well to combine. 

  3. Mash your bananas in a bowl and add them into the wet mixture. 

  4. Then add the flour, baking powder, bi carb, cinnamon and maca powder. 

  5. Mix all ingredients together thoroughly, ensuring there are no bubbles of flour, and pour the mixture into the baking dish. 

  6. Bake for roughly 40 minutes or until the top is golden and the centre is firm.
