LEMON AND COCONUT COOKIES

Ingredients:

1 1/2 cup almond meal

1 cup quick oats

1 cup desiccated coconut

1/2 tsp baking powder

2 eggs

60g butter

1/3 cup honey

juice of 1 lemon

1 tbsp lemon rind

 

  1. Start by preheating your oven to 150 degrees.

  2. Pop some baking paper on a large baking tray and set aside.

  3. Melt the butter over a low heat on the stove and leave to cool, while you combine the almond meal, oats, coconut and baking powder in a large bowl.

  4. Take a separate bowl and lightly beat the eggs, then add the lemon juice and lemon rind. In the pot with the butter, add the honey and stir to combine.

  5. Once the butter is warm, begin adding the mixture to the wet bowl.

  6. Then add the rest of the wet ingredients to the dry.

  7. Stir with your hands to combine, then begin rolling the cookie dough into small balls.

  8. Press the balls down lightly with your finger tips, until they form the shape of your cookies.

  9. Place the sweets in the oven for 20 minutes, or until golden brown.
