Gut-Healing Chicken Soup

Prep Time: 10 minutes 

Cook Time: 25 minutes

Serves 4 people

Ingredients:

1.5 liters of filtered water 

1 tbsp of bone broth concentrate 

1/2 tin of chickpeas 

2 garlic cloves, crushed 

2 celery stalks

1/2 head of broccoli, chopped 

1 carrot, cut into small pieces 

1/2 brown onion, diced 

1 tbsp of olive oil 

4 chicken drumsticks

Salt and pepper to taste

Coriander to serve (optional)

Method: 

1. Place the garlic, onion, and olive oil into a soup pot and cook for a few minutes.

2. Place the water, bone broth concentrate, and chicken in the pot and bring to a boil. Once at a boiling point, turn down to a low simmer and add the rest of the vegetables and chickpeas.

3. Cover with a lid and cook for 20-30 minutes, until cooked through.

4. Once cooked, remove the chicken from the stick then serve.
